Healthy Superbowl Secrets

We all know that Super Bowl Sunday is not just about the game—it’s also all about the food. But the store-bought snacks and pizza isn’t exactly the healthy diet we all strive for.  Here are a few quick, healthy recipes that regardless of who wins the game, you’ll score points among your fellow friends with.

Avacodo-Corn Salsa:

1 medium avocado, diced
3/4 cup frozen corn, thawed
1/2 cup quartered grape tomatoes
1 tablespoon chopped fresh cilantro
2 teaspoons lime juice
1/4 teaspoon kosher salt

Toss avocado, corn, tomatoes, cilantro, lime juice and salt in a medium bowl.  Serve with multi-grain tortilla chips or pita bread slices.  Makes 4 servings

Multi-Bean Chilli:

1 tablespoon canola oil
1 large onion, diced
4 cloves garlic, minced
3 tablespoons chili powder
1 tablespoon ground cumin
1/4-1/2 teaspoon ground chipotle chile or cayenne pepper, or to taste
1 28-ounce can crushed tomatoes
3 medium tomatoes, chopped
1 15-ounce can dark red kidney beans, rinsed
1 15-ounce can small white beans, such as navy beans, rinsed
1 15-ounce can black beans, rinsed
3 cups water
1/2 teaspoon freshly ground pepper

Heat oil in a Dutch oven over medium heat. Add onion and cook, stirring, until beginning to soften, 2 to 3 minutes. Reduce heat to medium-low and cook, stirring often, until very soft and just beginning to brown, 3 to 4 minutes. Add garlic, chili powder, cumin and chipotle (or cayenne) to taste and cook, stirring constantly, until fragrant, 30 seconds to 1 minute. Stir in canned and fresh tomatoes, kidney, white and black beans, water and pepper. Increase heat to high and bring to a boil, stirring often. Reduce heat to a simmer and cook, stirring occasionally, until the chili has reduced slightly, 10 to 15 minutes. Makes 6 servings.

Chocolate Chip Cookies:

3/4 cup rolled oats
1 cup whole-wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup butter, softened
1/4 cup canola oil
1/3 cup granulated sugar
1/3 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup chocolate chips

1. Preheat oven to 350°F. Coat 2 baking sheets with cooking spray.
2. Grind oats in a blender or food processor. Transfer to a medium bowl and stir in flour, baking soda and salt. Beat butter in a large bowl with an electric mixer until fluffy. Add oil, granulated sugar, brown sugar, egg and vanilla; beat until smooth and creamy. With the mixer running, add the dry ingredients, beating on low speed until just combined. Stir in chocolate chips.
3. Drop the dough by heaping teaspoonfuls, at least 1 inch apart, onto the prepared baking sheets. Bake cookies, 1 sheet at a time, until firm around the edges and golden on top, about 15 minutes. Cool the cookies for 2 minutes on the baking sheets, then transfer to wire racks to cool completely.

Also, remember to keep in mind that healthy eating alone isn’t enough.  Make sure you keep your friends and family active while enjoying the festivities of the day.  There are many fun and exciting way to get everyone up and moving on Superbowl Sunday!  My favorite is to have a game of football before the actual superbowl game.  Get the whole family involved and have a blast!  Wii Fit is also a fun and interactive game that puts your muscles to work.  Plus, its enjoyable for everyone.  Lastly, don’t forget to have your half-time dance party.  Bust out your best moves and show your guests how it’s done!
